Small company of 25 people, the Chapon Bressan will celebrate its 100 years at the time of Bocuse d’Or 2007.
Indeed, created in 1907 by André BOSONI, successively begun again by Pierre BOSONI, then Jacqueline BOSONI and her husband Jean VERNE, and directed since then by their daughter Carole COLLET, the company is a family company, who made a point of preserving the values of the tradition of the Bresse region.
Only slaughter-house to work exclusively only the poultry of Bresse AOC, all the company is centered around this product: selection of the stockbreeders, slaughtering specialized with completion of plucking to the hand, principle of drying of the flanges of the poultries, training of the teams according to the schedule of conditions of the AOC Bresse.
The rigour and the know-how of the CHAPON BRESSAN make that the company counts among its customers the best chefs, but also quantity of most beautiful shops, which use to need the best products.
A great part of the production of the CHAPON BRESSAN is also intended for export, with in particular a great part of the EEC and Japan.
Chickens and poulards of Bresse AOC are present all the year, the “king” capon of Bresse AOC and the turkey of Bresse AOC coming to supplement this range with Christmas.
In 1999, the CHAPON BRESSAN had already been selected as a supplier of Bocuse d’Or, by the means of its young pigeon, and it is with an extreme pride that it will be again in 2007 with his product headlight, the chicken of Bresse AOC.
