On Octobre 1, the Italian national selection ended with the victory of Martino Ruggieri, currently deputy head at the Pavillon Ledoyen in Paris. During the day, 4 candidates faced each other in 2 categories: the vegetarian dish and the meat dish. The chef from Apulia finally won after 5h35 of challenges, with the help of his commis, Curtis Clement Mulpas.
The end of the contest marks the beginning of the countdown to the Bocuse d’Or Europe, which will take place on the 11th and 12th of June in Turin. The flag bearer of the Italian cuisine only has one objective in mind: finish in the top 10 to be able to participate in the world final in Lyon during the Sirha in January 2019.
