The USA selection of the Bocuse d'Or will take place in Las Vegas on 17th December. 4 US chefs will compete against each other during 4:35 hours of tests to win their tickets to the grand Finale, that will take place in Lyon France 2017. 24 talented chefs from all over the world will face there their last tests to win the much coveted Bocuse d'Or trophy.

The Bocuse d'Or USA 2015 selection is organized by MENT'OR.

FISH dish >> Fjord Trout

The recipe must include one mandatory vegetable. The recipe must place the emphasis on vegetables, promoting/sublimating them. This aspect will be taken into account by the Tasting Jury for the marking. The preparation must contain at least 50% vegetables, plants, herbs and be presented in a restaurant-style presentation. All products for the theme must be used and should be clearly identifiable visually and/or through their taste. Everything featured on the plate must be edible.

All 4 candidates are expected to serve the hot dish to 8 people – plates must be prepared and sent together:

  • 2 plates will go to the Head Table for Chefs J. BOCUSE, T. KELLER, D. BOULUD
  • 1 plate will be used for the Official media photograph
  • 5 plates will be sent to the Tasting Jury members

MEAT dish >> Kurobuta Pork

The meat presentation must be done on the pre-selected platter and should include a minimum of 3 garnishes. All products for the theme must be used and should be clearly identifiable visually and/or through their taste.

All 4 candidates are expected to serve the hot dish to 8 people – plates must be prepared and sent together:

  • 2 plates will go to the Head Table for Chefs J. BOCUSE, T. KELLER, D. BOULUD
  • 1 plate will be used for the Official media photograph
  • 5 plates will be sent to the Tasting Jury members
