Just weeks after the Grand Final 2017, Mexico had to prepared for its National selection! On February 10, 2017, at Sirha Mexico, show which also hosts the Coupe du Monde de la Pâtisserie, 6 candidates and their commis faced each other during two tests to determine the candidate who would represent his nation at the Americas selection of the Bocuse d'Or, in April 2018.
During 5.35h, each team worked on a meat test, with lamb as the main product, and a fish test, with a Tilapia theme. At the end of this challenge, José Francisco Palacios won with his commis Ivonne Ramirez. Both have won their place for the Americas selection of 2018, with the aim of winning the Grand Final in Lyon in January 2019.
