It is known for the freshness and diversity of its products. With a coastline stretching more than 4,300 km, seafood is omnipresent,
and typical dishes also include fish and meat: cazuela, ceviche, empanadas, pastel de choclo …
In 2022, Team Chile hosted the Americas selection of Bocuse d'Or and as Jérôme Bocuse said "It was a fabulous day! It was the first time the Bocuse d’Or was held in Chile, and it’s such a great feeling to be together cheering for food."
After 5 participations in a row, Chile is one of the team-to-watch in the Bocuse d'Or network. The national team is supported by Achiga Chile. Founded in 1980, it oversees the interests and development of the gastronomic sector in Chile. It brings together the main companies in the gastronomic sector, it is made up of restaurants, fast food chains, institutional food service and supplier companies in the sector (collaborating partners), with more than 2000 points of sale in the country.

The 23rd edition of the contest will take place from April 12th to 13th, and will allow the winning chef to participate to the Bocuse d'Or to represent Chile.
For this edition, candidates will have to work on three tests:
- starter based on salmon mousseline, polenta and tomatoes confit
- main course based on chicken ballotine, mushrooms, potatotes and pepper
- dessert : choux
Gastronomy in Chile is gaining more and more notoriety and relevance at a local and international level. For this reason, the National Gastronomy Contest, organized annually by Achiga, arouses more and more interest among kitchen professionals to participate, given the showcase it generates, the experience acquired and because it is the official way to access world competitions.
Roberto Vallejos - chef at Madarin Oriental Hotel in Santiago - will represents Chile for the next Bocuse d'Or Americas.
